Introduction

In our society, the slimer you are, the better you look.
Each week you can find a new diet in every magazines or a new pill that can help you getting slim.
Fat has become the dirty word.
It is true that too much fat in your diet could lead to overweight problems, heart disease... but we should not forget that not enough fat could also generate health problems.

Fat is a nutrient as essential to good health as proteins and carbohydrates.

Fatty acid are critical to good nutrition. Unfortunately, our bodies cannot make some of them. They are called Essential Fatty Acids (EFA).

A diet low in EFA increases the risk of cardiovascular disease, hormone abnormalities and decreases brain function.

Nowadays, people eat small amounts of EFA and lots of refined and unnatural fats and oils.

The commercial refinement of fats and oils has led to a lower availability of EFA in the diet and also transforms EFA into toxic compounds.
