You want to present a plate full of colors and odors.
Here is what I propose:
If you want to combine different foods, try to have a vegetable, a legume, a cereal and a sauce.
You do not want to fry everything; it would be too heavy to digest. Something must be steam, usually it is the vegetables but it could be the cereals.
The sauce does not have to be greasy. Look for a low-fat recipe.
If you choose a legume different than lentil, keep in mind that they need to be soaked overnight before cooking.
