What affects folate status?
- Food preparation:
The vitamin is easily lost when foods are:
- stored for too long: after 3 days most of it is gone
- stored too warm temperature: folic acid is sensitive to heat.
- stored in a light place
- overcooked or reheated: a lengthy cooking easily oxidizes foods rich in folates. Up to 50% of folic acid in foods may be lost in processing and cooking.
Always cover vegetable airtight, store them in a cool dark place and eat them as soon as possible.
